Rosemary Spiced Nuts
1 pound unsalted mixed nuts
1 tablespoon melted margarine
3 tablespoons coarsely chopped fresh rosemary
1 tablespoon dark brown sugar or granulated sugar (brown or turbinado sugar is best)
½ teaspoon cayenne pepper
1 tablespoon kosher salt
- Preheat oven to 350 degrees. In a bowl, toss nuts with margarine, then spread out onto a baking sheet. Bake until golden brown, about 10 minutes, stirring frequently.
- While nuts roast, mix remaining ingredients in a bowl. Add nuts and toss.
Serve warm or cool.
Yield: 6 to 8 servings
Serving notes:
- Best served warm. If made in advance, zap them in the microwave for 10-15 secs before serving.
- Variation: make with 1 lb of brazil nuts instead of mixed nuts
